Bacon wrapped chicken bites are a fave around here and we wanted to give you a little peek into how they're done!
First of, lemme just say that this is a little something I learned from Charlie back in college. We used to hang out with friends, cook these and then proceed to eat way too many of them!
Bacon wrapped chicken bites are fairly easy to do, they can be changed up in various ways to suit your taste, and they're always a big hit with crowds of people.
First, let's talk about what you'll need:
- Chicken Breasts
- Bacon (thin cut is easier to wrap with)
- You favorite seasoning...in this case we used a combination of Kosmos Q SPG and Boar's Night Out Midwest Dust
- Blues Hog Original and Tennessee Red sauces
- Toothpicks
- Saucepan
- Something to hold all of your bacon wrapped bites in like this prep tub
- Quick/instant read thermometer such as this Thermoworks Thermopop
Directions:
- Get your grill set up for direct cooking at 350-400°F and go prep your food
- Chop up all of your chicken breasts into 1"x1" chunks (or thereabouts)
- Take your bacon and cut your strips in half. This is roughly the length you need to wrap your chunks with
- Season all of your chunks and give them a kick around to evenly coat them in seasoning. We used a fairly moderate coating of SPG followed by a pretty moderate coating of Midwest Dust
- It's easiest if you lay a piece of bacon down and then roll your chicken chunk up in it and stick it with a toothpick to hold it and put them in your pan
- Once you have all of your bites rolled, go ahead and throw a little extra seasoning on the outside of everything and toss 'em on the grill
- While those are going, let's mix your Blues Hog Original (2 parts) and Tennessee Red (1 part) together and stir them up until the sauce has an even texture. We added a little extra Kosmos Q SPG to our sauce, but you don't have to if you don't want
- Check on your chicken and turn for good even color and doneness along the way. Now is a good time to put the sauce on the grill to warm as well if desired.
- Once your bites are reading 165°F internal temp, they're ready to come off
After a few minutes to cool, you can either use your dipping sauce or don't, but I'm pretty sure it's not going to matter much one way or the other because you're going to be seeing some eyes rolling in to the back of some heads!
